Roasted Chicken Rice

Today made roasted chicken rice set using the roast chicken recipe I tried before. As for the rice, I used Kee's Chicken Rice Paste to cook the rice.

Recipe for roast chicken
(Adapted from Margaret Goh with minor amendment made)

Ingreds:
6 chicken thigh
1.5 tsp spice salt
1tsp dark soya sauce

Method:
Trim off excess fats from the chicken thigh
Drain dry or wipe dry with kitchen paper
Dry it for an hour in the fridge uncovered
Rub with 1.5 tsp spices salt on the chicken thigh
Add 1tsp drop of dark soya sauce for colouring to get a nice brown colour
Return to the fridge and leave it uncovered for another hour
Cover it and let it marinade for another 2 hours
Bake at preheated oven at 200deg for 50mins or till golden brown

Note: I use airfryer and airfry at 160deg for 25-30mins

Kee's Chicken Rice Mix


Simple chicken rice recipe
Ingredients:
1.5cup of rice
Water amount (as per normal amount when u cook rice)
1 tbsp Kee's Chicken Rice Mix
4-5 pandan leaves, washed

Method:
1. Add all the ingredients into rice cooker and cook
2. When rice is cook, you can mould them into ball by scooping into cling wrap. Wrap up the cling wrap and mould into ball with your hand. Put aside for about 20min or so to let the ball stay in shape.
3. Then remove the cling wrap and place the chicken rice ball on serving plate

Mee Hoon Kuih 面粉馃

Thank you, Catherine for recommendation to try out your recipe. My family love it even the kids too. The recipe for the hoon kuih is so easy and very nice.  I have made a cute version for my kids too.

Red Vegetable Soup

My dad used to cook this simple soup for us.  When i wanted to try cooking this soup, i can no longer ask him which vegetable is this and where to buy it. So every trip to supermarket or wet market, i try to find the look alike vegetable to see whether is it the one that my dad used to buy.  I am glad that now i know the vegetable used for this soup is called "Red Vegetable". 





Ingredients:
1 pack of red vegetable
1 cloves garlic, minced
1 slice ginger
Some minced pork balls
Some corn flour
Some light soya sauce
Cooking oil
1300ml water
1 cube knorr chicken 
1 salted egg, cut the yolk into 4
Salt to taste, optional

Method:
1. Marinate minced pork with some corn flour and light soya sauce and set aside.
2. Cut the leaves from the red vegetable into half , washed and set aside.
3. Heat up pot with abit of oil and fry ginger and garlic till fragrant.
4. Pour in water and chicken knorr cube. Cover the pot let it boil.
5. Add in minced pork, red vegetable leaves( i did not use the red stem). Cover and let it cook.
6. Open cover and add the salted egg whites and yolk and let it cook.
7. Test taste, add salt to taste if you want

Baked Halibut with Asparagus side with baked tomatoes, potato and sauteed shiitake mushroom

Today we are having Baked Halibut with Asparagus side with baked tomatoes, potato and sauteed shiitake mushroom.

Marinate for Halibut: 
Salt
Pepper
Dried Basil
Dried Rosemary
Melted Butter
Bread Crumbs

Marinate the fish with the above for 1 hr in the fridge.
Baked in oven at 200 deg for 10-12mins depend on size of fish.

Marinate for baby potatoes: 
Salt
Pepper
Dried Basil
EVOO

Marinate the baby potatoes with the above till you are ready to bake it.

Sauteed Shiitake Mushroom:
Butter
Garlic
Milk
Grounded black pepper

Melt some butter in pan, fry garlic till fragrant, add in sliced shiitake mushroom and fry till cooked then add in some milk and let it cook awhile then add in dash of black pepper and off heat.

Marinara Pasta

Tried Marinara Pasta at a Pasta eating place and i like it alot so i tried to replica it.  It is yummy and my hubby love it too

Ingredients:
Serve 3-4 pax

1 pack of SW Marinara sauce
3-4 tbsp ketchup
8 cherry tomatoes
Some shitaka mushroom
1 sotong, cut
Prawns, shelled and devined
Spaghetti of your choice
Butter
Some garlic, chopped

Method:
1. Boil pasta in a pot with some butter and salt. Then set aside
2. Heat pan with butter. Fry garlic and mushroom till mushroom soft. Be prepare to add more butter or olive oil as mushroom will absorb the oil
3. Add in marinara sauce, ketchup, cherry tomatoes and stir fry awhile
4. Add in sotong and prawns and stir fry till 3/4 cook then toss in the pasta. Mix the pasta with the sauce.
5. Off heat and serve

Finally i made this "Mian Jian Kueh" 面煎糕 after kiv the recipe for 2 yrs. Original recipe from mymindpatch.blogspot.com.sg use happycall pan to do it. I used normal round pan to do the job

Collection of Refridgerator Oats i made

Here is another batch of Overnight Refridgerator Oats Meal i made so far.  Main ingredients needed is Raw Rolled Oats, Greek Yogurt, Milk, Honey, Fruits, Chia Seeds. Now i even add Organic Quinoa Flakes in it. My friend, Serene Mok, recommended me to add quinoa flakes and after my first try I like it and now my every refridgerator oats meal always have quinoa flakes added

Dad's Simple Soya Sauce Chicken

My dad is a good cook.  This is another simple dish that my dad used to cook for us too. Ingredients used is really simple.


Ingredients:
12 pieces chicken parts
8 slices ginger, lightly mashed (6 marinate together with chicken)
2-3 clove garlic, lightly crushed
1.5 tbsp of Lee Kum Kee Premium dark soya sauce
1/2 tbsp of light soya sauce
300ml water
1/2 tsp sugar
Spring Onion for garnish

Note: I used measuring spoon for measuring the amount of dark soya sauce and light soya sauce

Method:
1) Marinate chicken parts with 6 pieces of ginger, dark soya sauce and light soya sauce for at least 1 hr.
2) Heat oil and fry the balance of ginger and garlic till fragrant
3) Add marinated chicken parts and the sauce in the pan. Stir Fry until the flesh turn white ( almost cooked).
4) Pour in the water let it cook till the sauce left half
5) Add in sugar and stir for while. Serve

Baked Spaghetti with Crispy Chicken

Baked this few weeks ago and my kids love it so much


Ingredients:

1/2 btl of Leggo Bolognese Sauce
Some Ketchup Sauce
Garlic
Butter
Some Shiitake Mushroom
Spaghetti portion for 3 pax
Morazzella Cheese
CP brand crispy chicken chunk

Method:
1. Boil water with salt and abit of butter then add spaghetti in till cooked. Set aside
2. In a pan, add butter to heated pan and add garlic and shiitake mushroom and stir fry for awhile
3. Add bolognese sauce and stir fry
4. Add in cooked spaghetti and give it a toss. Off heat
6. Transfer to baking dish and scoop the bolognese spaghetti to baking dish
7.Top with morazzella cheese and bake in oven at 200 deg for about 12-15mins or till golden brown
8. Airfry some CP Crispy Chicken Chunk and serve it on top with the Bolognese Spaghetti

5K Kaya Bun and Cheese Bun

With the 5k bread recipe, I also made Kaya Buns and Cheese Buns

5k Bread (Butter Bun)

This bread recipe really worth 5 thousand dollar. With this recipe i do not need to buy from breadtalk anymore.

Using this recipe, i made this Heart Shape Butter Bun

Starter dough
210g bread flour
90g cake flour
24g caster sugar
6g instant dry yeast
240g water
Main dough
210g bread flour
90g cake flour
96g caster sugar
1 1/2 tsp salt
24g milk powder
90g egg
54g water
72g unsalted butter, softened

Directions
- prepare a pan with base measuring 26.5 x 19.5cm, and top measuring 29.5 x 23cm. if you do not have this, you can use an 18cm square cake pan for this but utilising only 2/3 of the above recipe
- mix all starter dough ingredients dough together and allow to sit in a warm environment to rise till it looks like “honeycomb”
- mix the above with main dough ingredients except butter and knead till it is soft and non-sticky. incorporate butter and knead till it is shiny and pliable
- allow dough to rise till it doubles in size
- after dough has risen, punch dough down and WITHOUT RESTING dough, divide it into 6 equal portions and roll each portion out into a 1m rope. please refer to the same site for shaping of the dough. for non chinese reading bloggers, basically, what you do after rolling out the rope, is to bring one end to the other. then using your left hand to secure the dough, twist the roll inwards twice, and then tuck it (the right ends) into the left side of the dough (where the hole is)
- place shaped buns into oiled baking pan and allow to rise
- bake in preheated oven of 180 degrees C on lower rack for 30 mins
- once out of oven, brush rolls with melted butter

Note: I used a heart shape pan instead of the mentioned pan

Roti Boy Aka Mexican Bun

My first attempt on Roti Boy Bun last year.  Using straight dough bread recipe from Soh Pin Tee, I made it into roti boy buns


Do take note my watermark previously is Tiffy's Baking Heaven, now is Tiffy Delicatessen

Recipe from Soh Pin Tee
  • 340g bread flour
  • 50g sugar
  • 1/2 tsp salt
  • 1/2 tbsp yeast
  • 210g milk
  • 40g butter
 Method:
  1. Mix all dry ingredients in a mixer* and using a dough hook mix till well combined.
  2. Add milk till dough is formed.
  3. Add softened butter and knead for 15 minutes or till dough is not sticky and forms a window panel stage
  4. Place dough in a greased container,cling wrap it and proof for 45 minutes or till it doubles its size.
  5. Remove and divide them into small doughs(around 25-30g) and let them rest for 15 minutes.
  6. Roll out,fill and shape as desired.
  7. Place shaped dough onto lined baking tins,cling wrap and proof for 45 minutes.
  8. Brush the top with milk.
  9. Bake in a pre heated oven for 12-15 minutes at 160°C or till cook depend on individual oven
  10. Remove from baking tin immediately and cool on rack

Chicken Stew

I have made this Chicken Stew for many time as a 1 dish meal.  It is so easy peasy and delicious.

Fried Nian Gao Balls with Sweet Potato and Taro

I made this Fried Nian Gao Balls with Sweet Potato and Taro during the Chinese New Year Period.  Using the Sweet Potato Ball recipe from Nasi Lemak's Blog, I made it with the Nian Gao as filling


 Sweet Potato recipe adapted from Nasi Lemak's Blog

250g Nian Gao, cut into cubes
Oil for deep frying...

Ingredients for sweet potato dough
125g sweet potato, cooked and mashed
25g all purpose flour/ corn flour
8g glutinous rice flour
25g sugar
A pinch of salt
Abt 1tsp water or adjust accordingly ( it depend on the type of sweet potato you use)

Ingredients for Taro dough
125g Taro, cooked and mashed
25g all purpose flour/ corn flour
8g glutinous rice flour
25g sugar
A pinch of salt
Abt 1tsp water or adjust accordingly ( it depend on the type of sweet potato you use)

Method
1. Combine ingredients for sweet potato dough and knead till smooth dough.
2. Combine ingredients for taro dough and knead till smooth dough
3. Pinch a small portion of each type of dough, join them together and roll into ball. Flattened the dough and wrap a piece of nian gao cube in centre and roll into ball.
4. Heat oil in a wok, deep fry nian gao ball over medium flame till golden brown. Dish out and drain.

Gambas al Ajillo (Spicy Shrimp and Garlic)

My friend, Ultimatejo Tan recommend me to try out this dish which is really superb that I have made it few times in a month.  Thank you, Jo for your recommendation


Recipe adapted from a website but cannot remember the web link. Below is the recipe I copied down in my notes

Makes 2-4 appetizer servings
1/4 cup olive oil...
6-7 garlic cloves, finely chopped
1/2 teaspoon red chile flakes
1 thai bird chile, finely chopped
1 pound shrimp, peeled and deveined
1/2 teaspoon smoked Spanish parika
Optional–1 tablespoon banana ketchup (can be found in Filipino markets)
juice from half a lemon
Salt and pepper, to taste
Chopped parsley for garnish

Heat the oil in a large saute pan over medium-high heat. Add the garlic, chile flakes, and chile to the pan and cook until garlic just begins to brown, about 30 seconds.

Add the shrimp and paprika to the pan and toss to coat. Cook the shrimp until they turn pink and are just cooked through–about 3 minutes.

Muah Chee

I love Muah Chee.  Last time whenever there is pasar malam, I will definitely buy Muah Chee from there but now I can make it at home whenever I want to eat


Original recipe shared in a cooking group. I have made some amendment to it

Ingredients:
1 cup glutinous rice flour
180 ml water...

Peanut Coating:
3/4 cup grounded peanuts
1/4 cup sugar

Method:
1) Mix glutinous rice flour and water together to become a watery paste
2) Heat pan with 1.5 to 2 tbsp shallot oil or peanut oil
3) Pour in the watery paste and cook on very low heat for about 2-3 mins.
4) See that it has "set" then use chopstick and roll the dough together to form a lump
5) Toss the dough for awhile to ensure totally cooked
6) Remove and put into the peanut coating to coat. Cut into bitesize and serve

Airfried Char Siew

Char Siew is one of my favourite dish.  I have made this Char Siew using Airfryer.




Char Siew (using Philip Airfryer)
Ingred:
Pork (五花肉-shoulder butt)

Marinates:...
2 tbsp Lee Kum Kee Hoisin Sauce
1tbsp Rose Wine
1tsp Light Soya Sauce
1tbsp Dark Soya Sauce
1tbsp Honey
4tbsp Sugar (or 1/4 cup sugar)
1tsp Sesame Oil
Dash of Pepper

Method:
1) Marinate Pork with marinates for at least 4hrs
2) Preheat airfryer to 200deg for abt 5min.
3) Shake off excess char siew sauce before roasting in airfryer. Put the char siew in basket and roast for 10min( depend on the size of your pork).
4) Then lower the temperature to 160deg and roast for another 10-20min until it is slightly charred

Note: Time varies depend on personal taste preference and size of meat

Fruity Popsicles

It is good to make fruit popsicle on a hot sunny day. It is so simple and yummy.


Fruits used is strawberries, Mango and Kiwi.
Juice used is passionfruit juice
Mould available from Daiso...

Instructions:
Diced mango. Slice strawberries and Kiwi. Place the fruits in molds/cups and add passionfruit juice to the brim. Insert the stick into popsicle and freeze for few hrs.

To remove the Popsicles from the molds/cups, run under tap water until they are easily released.
Notes
Adjust the amount of fruits according to your liking. You can also add watermelon, mango, raspberries, peaches, etc.

Butter Marble Cake 1

Trying out this marble butter cake shared by Serene Sim, indeed it is soft, fluffy and buttery. No regret trying this recipe

Ingredients:

167g plain flour
2tsp baking powder
1/8 tsp salt
167g butter
93g sugar
20g icing sugar
2 eggs
1/2 tsp vanilla essence
72g milk

Method:
1) Sift flour, salt, baking powder
2) Cream butter and sugar till pale creamy
3) Add egg one at a time
4) Add vanilla essence
5) Add dry ingreds and milk in alternate batches
6) Pour into greased and lined 6" cake tin
7) Bake in preheated oven at 170 deg C for 40-45mins or till cooked
8) Leave in tin for 10 mins before removing to cool on rack

For marble cake:
Mix 1.5 tbsp cocoa powder with some hot water, stir to form paste. Then use a small portion of butter cake batter to mix with the chocolate paste

Stir fry Broccoli with Stewed Pork

Kids love broccoli so today I stir fry broccoli with a can of Stewed Pork.


Ingredients:
Broccoli
Some carrot, sliced
Can of stewed pork
Garlic
Some water
Dash of pepper
Salt to taste, optional

Method:
1. Heat pan with oil and fry garlic till fragrant
2. Add in broccoli and carrot to pan and stir fry
3. Add in some water and the sauce from the can of stewed pork and continue to cook till broccoli is done
4. Add in the stewed pork and let it cook for another few mins
5. Add salt to taste and dash of pepper

Baked Cheesy Fusilli with Sutchi Fillet and French Bean with Bolognese Sauce

With leftover half bottle of bolognese sauce, i cooked Baked Cheesy Fusilli with bolognese sauce for dinner


Ingredients:
1/2 btl of Leggo Bolognese Sauce

Garlic
Butter
1 Sutchi Fillet, cut into chunk
Some French Bean, cut into small pieces
Fusilli for 3 pax portion
Morazzella Cheese

Method:
1. Boil water with salt and abit of butter then add fusilli in till cooked. Set aside
2. In a pan, add butter to heated pan and add garlic and french bean and stir fry for awhile
3. Add bolognese sauce and stir fry
4. Add chunks of sutchi fillet and stir fry till cook
5. Add in cooked fusilli and give it a toss. Off heat
6. Transfer to baking dish and scoop the bolognese fusilli to baking dish
7.Top with morazzella cheese and bake in oven at 200 deg for about 12-15mins or till golden brown

Nonya Bak Chang

Since young, Nonya Bak Chang is my favourite bak chang. My late grandma used to make alot and give to close relatives. Few years before she passed on, she told my aunty to write down the recipe and keep it. Last year I asked my aunty for the recipe and i try it out. I may not have reached 100% of my grandma's skill but think last year, my first try i reached 90%. This year think i have reached 95% of her standard

Her recipe need 
Lean meat (推肉)
Mushroom
Dried winter melon
Coriander powder
Dark soya sauce
Pepper
Salt
Crushed bean paste
Water from soaked mushroom
Onion
Garlic
Cooking oil
Pandan leaves
Bak zhang leaves

Most tedious part of making nonya bak chang is chopping, cutting ingreds into small tiny cubes. But the final product is really yummy as shown here

Pandan Chicken

Made this pandan chicken for second time. This time my wrapping is so much better than first time.
This time round, I use another recipe from another blog and glad it is yummy to my family liking
Recipe adapted from bits-of-taste.blogspot.sg and I replaced the ginger juice with garlic powder by agaration. Instead of using oven, I airfry them using my Philip Airfryer at 180deg for 20mins

FROZEN Theme Cake

I made this FROZEN theme cake to surprise my daughter and which I did promise her I will make this cake her after she recovered from her hand injury. She is very happy seeing the cake when she is back from school

Butter Marble Cake using D'Isigny Butter and Homemade Vanilla Essence

Creme Brulee

Been searching for crème brulee recipe and lucky I chance upon Anncoo's blog and saw crème brulee recipe in her blog.  When I first made it, it is so yummy and this is my 4th time making it.  Made it as a Valentine's Day Dessert with carved strawberries and dried rose bud as decoration

My refridgerator oats meal for tomorrow will be strawberries, blueberries and mango. As usual with greek yogurt, raw rolled oats, low fat milk and chia seeds
