Japanese Garlic Fried Rice

This is a must try fried rice.  My daughter keep saying this fried rice is very nice while she eating it.  It is my second time cooking it and have worked out the recipe after my first attempt.




Ingredients:
1 cup of rice, cooked and cooled overnight
8 cloves garlic, minced
10 prawns, cut into small chunks
10 stalk of french bean, cut into small pieces
3 eggs, 1 mixed into rice before frying the rice
Japan Soy sauce 2.5 tsp
Mirin 2.5 tsp
Oyster 2 tsp
Cooking oil 2.5 tbsp

Method
1. Heat oil in wok. Fry garlic till light brown. Dish up the garlic and set aside.
2. Using same oil in wok, fry 2 eggs and prawns separately. Dish up and set aside.
3. Add the french bean into wok and fry till half cooked.
4. Add in the rice and stir fry to separate the rice.
5. Then add in the fried egg and prawns. Stir fry to mix with the rice and french bean.
6. Add in japan soy sauce, mirin and oyster sauce.
7. Stir well to mix with the fried rice.
8. Add in the fried garlic and mix with the fried rice.
9. Dish up and serve.

Chinese Cabbage Rice

My late grandmother can cook very fragrant cabbage rice and I am glad today I finally cook it for my family.  Even my 5 years old boy said it is nice.  I am very happy as it is my first attempt and the end result I like it too.


Pan fry pork belly before setting aside



Ingredients:
1 1/4 cup of rice, drain it with water
4 chinese mushroom, soak in water
1 small handful of dried shrimp, soak till soft
About 200g of cabbage, slice to smaller pieces
200g pork belly, sliced thinly
1 tbsp light soya sauce
1 tbsp dark soya sauce
Some salt
Dash of ground pepper
4 cloves garlic, minced

About 1.5 cup of water from soaking mushroom and dried shrimp to cook the cabbage rice in rice cooker

Method:
1. Soak chinese mushroom and dried shrimp separately with water till soften. Drain and set aside. Do not throw away the water. Slice the mushroom thinly.
2. Heat wok and stir fry pork belly till lightly brown.  Dish up and set aside.
3. With the remainding oil from the pork belly in the wok, fry garlic till fragrant.
4. Add in dried shrimp and mushroom and stir fry for few minutes.
5. Add in cabbage and fry for a minute.
6.  Add in the light soya sauce, dark soya sauce, salt and pepper and stir fry to mix.
7. Add in the rice and stir fry for 1 minute to mix well with all the ingredients.
8. Then pour all into a rice cooker.  Add the water from soaking the mushroom and dried shrimp to cook the cabbage rice in rice cooker.

Mushroom Rice

Last week on a cooking show by Chef Sam Leong, he cooked mushroom rice for those special guest.  It is a very simple dish and I decided to cook it and try it out.  Instead of normal plain rice serve during dinner, tonight we will have this fragrant mushroom rice for our dinner.


Ingredients:
7- 8 Shitake mushroom, discard the stem
Some cornflour
Oil for deep frying
1.5 cup of rice, cook in rice cooker

Method:
1. Cut the mushroom into small cube size.
2. Sprinkle some cornflour on the cube size mushroom. Mixed it thoroughly with your hand.
3. Heat oil in wok. Deep fry till lightly brown.
4. Dish up the fried mushroom and mix it into the cooked rice in the rice cooker. Let it stay warm inside the rice cooker so that the aroma of shitake mushroom can mix into the cooked rice.
5. Serve hot.

Nasi Lemak Rice

This is a agaration recipe I used.  I didn't really measure the amount of coconut milk I used. If you wish to try it out , please go ahead..😄
As for the chicken, I used the prawn paste chicken recipe written in my blog too. As for the otah and sbal chilli, I get it from Lee Wee Brothers at Jem Shopping Centre.


1.5 cup of rice, soak with water for 30mins and drain away the water
About 250ml coconut milk
Some water
Some salt
3 pandan leaves , cut into smaller parts
Banana leave

Method:
1. Lay the steaming bowl with banana leave
2. Mix the coconut milk, water, salt and pandan leaves in the steaming bowl
3. Steam the coconut rice till cook

Claypot Chicken Rice

This is one of our favourite rice that I have not cook for almost a year.  Yes!!! It is claypot rice.  We have this one pot rice for dinner tonight.

After mixed and drizzle more dark soya sauce

Ingredient:
3 skinless chicken thighs, deboned and cut into chunk
1 chinese sausage, sliced
2 chinese mushroom, soak with water till soft then sliced
1.5 cup of washed rice
250ml chicken stock
Water
some sesame oil
Some cai xin
Spring onion, for ganish

Marinates for chicken:
1 tbsp Superior Lee Kum Kee Dark Soya Sauce
1.5 tsp Oyster Sauce
3 slice ginger or some ginger juice

Method:
1. Marinate the chicken for 1 hr in fridge.
2. Cook the rice in claypot with chicken stock, water and sesame oil till cooked.
3. Add in sliced mushroom, sliced chinese sausage and marinated chicken thigh(remove the sliced ginger) and let it simmer for about 15 mins.
4. Add in caixin and simmer for few more minutes.
5. Drizzle more dark soya sauce and serve

Cheese Sausage, Ham and Mushroom Baked Rice

I have been thinking what should I cook for dinner tonight and thinking to cook one dish meal so decided to do baked rice.  By chance, manage to find a few baked rice recipe from noobcook so I decided to try her recipe.



Recipe adapted from http://www.noobcook.com with amendment to proportion for my family of 2 adults and 2 kids

Ingredients

- 1 cups uncooked rice 
- Water to cook rice
- 3garlic cloves
- 2 to 3 slices of ham, cut to small squares
- some shitake mushroom
- some cheese sausage
- 15g butter (or use olive oil for healthier version)
- generous tablespoons mushroom soup (use Campbell’s, straight from the can – no need to mix with water or cook)
- Shredded Mozzarella Cheese
- Salt & Pepper

Directions
1. Wash and rinse uncooked rice until water runs clear.
2. In a heated wok or saucepan, melt the butter. Add the washed rice, salt and black pepper to taste. Stir well.
3. Wait for the rice mixture to cool, then transfer to a rice cooker. Add the garlic cloves. Add water to cook rice (I use slightly more than 1 cups of water – adjust the water amount according to your cooker).
4. When the rice is cooked, stir in sliced ham, shitake mushroom and cheese sausage. Portion out the rice into oven-safe baking dishes (you can also use disposable aluminium tray) until about half the depth of the dish.
5. Smear some mushroom soup sauce on top of the rice, and topped with a layer of shredded mozzarella.
6. Baked in a pre-heated oven at 200C (392F) for about 20-25 minutes, or until all the cheese has melted and is very slightly browned.

Sambal Fried Rice with Fried Chicken

Been so long since I last cook sambal fried rice. The sambal chilli I used is bought during the food fair at singapore expo.




Recipe:

Cooked rice for 2 pax
Some butter
2 cloves of garlic, mashed
Mixed vegetables
1 slice of luncheon meat, cut into cubes
Few pieces of mushroom, can type
About 1.5 tbsp or 2 tbsp of Ah Ma Sambal Balachan Chilli
1 egg
salt and knorr chicken powder to taste

Method:
1. Melt butter on pan and add garlic in and fry till slightly brown
2. Add mixed veg , mushroom and luncheon meat in and stir fry awhile
3. Add in rice and stir fry to separate the rice so that it will not stick together.
4. Add in beaten egg and fry
5. Add in sambal balachan chilli and stir fry till rice is well mix with the sambal chilli
6. Add salt and knorr chicken powder to taste.
7. Serve
