Jaren's 4th Birthday

Today is my son's birthday.  He is 4 years old this year.  He loves to watch Dora Adventure cartoon so I decided to make a Dora theme cake for his celebration in his school.  Apart from the birthday cake, I have also prepared goodies bag for all his friends.

Garlic Butter Prawn

Simple, yummy and easy to cook dish that my family love.  It has been quite awhile since I last cook prawns so this morning I bought some prawns to cook.


Ingredient:
10 medium size prawns (remove shell)
Few chunk of unsalted butter
5 cloves garlic, minced
Some salt

Method:
1. Heat pan. Add butter in. Once butter melt, add in minced garlic. Fry till light brown.
2. Add in prawns and stir fry.
3. Add some salt and stir fry till prawns is cooked
4. Serve

Steam Fish

Since there are people request for the sauce recipe, I will share it on my little blog here.


Ingredient:
1 part of fish(threadfin, snapper etc)
2 slice of ginger (cut into strip)
1 tbsp oyster sauce (I used normal tbsp)
1/2 tbsp light soya sauce (I used normal tbsp)
1/4 tsp sugar (I used measuring spoon)
30ml water
Dash of sesame oil
Dash of ground pepper
Spring onion (for ganish if you want)

Method:
1. Wash and pat dry fish. 
2. Place fish on steaming plate. Place ginger on the fish.
3. Mix oyster sauce, light soya sauce, sugar, water, sesame oil, ground pepper in a small bowl. Then pour over the fish.
4. Steam for 8 to 12 mins until just cooked.  Time vary as depend on size and thickness of fish.
5. Serve

Teddy Bear Cookie

When I saw my friend, Sally Amudhan, post the teddy bear cookies she made, I already bookmark her picture as I want to make it for my boy's birthday's goodies bag item.  Here my chance to make this cute teddy bear cookies.  Hope all his classmates will be happy to see such cute teddy bear cookies.

Cookie dough recipe:
I used the recipe which I used previously butter-cookies

After you have use cookie cutter to cut the shape out, transfer to baking tray. 
Place one m&m chocolate in the centre. Slowly tilt the two hand up till it look like holding the m&m chocolate.
To prevent the m&m chocolate from cracking, bake the cookies at low temperature. (I tried my best but there is some chocolates with some cracks)

Kuih Ubi Kayu - Steamed Tapioca Kueh

Last minute decided to make kuih ubi kayu since I have all the ingredients needed.  This recipe is shared by Rosie Khoo.  It is very soft and really love it so much.

Recipe from Rosie Khoo
Ingredients:
500g tapioca (grated)
125ml coconut milk
75ml water
4 tbsp fine sugar
drop of yellow food colouring

Coconut for coating:
Grated Coconut
pinch of salt
1 pandan leaves (cut into few short pieces)

Method for steaming coconut for coating:
Steam grated coconut with pinch of salt and pandan leaves for 5mins. Then remove pandan leaves and set aside.

Method of steaming kuih:
1. Mix all the ingredients together.
2. Pour mixture into baking tin.
3. Steam at rapid boiling water for 1 hour. Then let cool
4. Once cool, cut into pieces and coat with steamed grated coconut.
5. Serve

Kueh Tu Tu

This is my best favourite snack since young. Kueh tutu with coconuts filling is my favourite.  I have been always wanted to try making it few years ago but the mould is really expensive.  This time after seeing my friends post kueh tutu thus made up my mind to buy the mould without thinking much.

This is how I steam the kueh tutu

Ingredients:
1 cup rice flour
1/4 tsp salt
3 pandan leaves (cut into short section)
75-80ml hot water

Filling:
1/4 cup grated coconut (white portion only)
Half of 1/4 cup orange sugar
1.5 tbsp water

Method for filling:
In a saucepan, melt sugar with water on low heat. Add grated coconut. Stir fry till almost dry and set aside.

Method for flour:
1. Stir fry rice flour in a wok with pandan leaves for about 7 to 8 mins on low heat.  As you fry, the pandan leaves will get drier.
2. Mix salt with hot water and sprinkle over fried rice flour with a hand whisk or the back of a fork.  Mix salt solution together with fried rice flour until it become small lumps.
3. Sieve it
4. Fill the mould with a little sieved rice flour. Do not press. Add coconut filling in. Top up with rice flour and lightly press it.  Cover with muslin cloth, flip over and knock onto steamer.
5. Steam with cover under med low heat for 7- 8mins

Earl Grey Tea Cookies

This few weeks have been a hectic weeks for me till this year I cannot even find time to bake cookies for Teacher's Day for my boy's teachers in the childcare.  Hence, this cookies was bake on the actual day morning and have to complete by lunch time as his teacher only teach them till before their nap time.  I am glad to manage to pack them into six boxes before bringing to the school.



Recipe adapted from Jasmine

Ingredients:
135g unsalted butter, softened
70g icing sugar
1 egg yolk
5 satchet of earl grey tea leaves
180g cake flour
50g almond meal

Method:
1. Combine the flour, almond meal, earl grey tea leaves. Mix well and set aside.
2. Using a whisk, cream butter and icing sugar till combined.
3. Add in egg yolk and mix well.
4. Fold in flour mixture till just combined.
5. Roll dough into log shape on parchment paper a d freeze it for 1 hour.
6. Remove dough from freezer and thaw awhile.  Cut into 1cm thickness each and placethem.on lined baking tray.
7. Bake for 180 deg for 12 mins.
8.  Let cool completely before storing in air tight container
