Red Vegetable Soup

My dad used to cook this simple soup for us.  When i wanted to try cooking this soup, i can no longer ask him which vegetable is this and where to buy it. So every trip to supermarket or wet market, i try to find the look alike vegetable to see whether is it the one that my dad used to buy.  I am glad that now i know the vegetable used for this soup is called "Red Vegetable". 





Ingredients:
1 pack of red vegetable
1 cloves garlic, minced
1 slice ginger
Some minced pork balls
Some corn flour
Some light soya sauce
Cooking oil
1300ml water
1 cube knorr chicken 
1 salted egg, cut the yolk into 4
Salt to taste, optional

Method:
1. Marinate minced pork with some corn flour and light soya sauce and set aside.
2. Cut the leaves from the red vegetable into half , washed and set aside.
3. Heat up pot with abit of oil and fry ginger and garlic till fragrant.
4. Pour in water and chicken knorr cube. Cover the pot let it boil.
5. Add in minced pork, red vegetable leaves( i did not use the red stem). Cover and let it cook.
6. Open cover and add the salted egg whites and yolk and let it cook.
7. Test taste, add salt to taste if you want
