Fried Chicken

A big thank you to Simon Leong in a facebook cooking group.  It is a superb recipe.  Even my hubby commented that these is so much better than KFC.  Meat is very fresh and soft as I bought fresh chicken from wet market.  A indeed Must Try recipe.





Ingredients:
Flour Mix
200g All Purpose Flour
100g Corn Flour
100g Rice Flour
2 tbsp Fine Salt
1.5 tbsp Fine Ground Mixed Herbs (thyme, basil, oregano)
1 tbsp Ground Black Pepper
1 tbsp Ground Dried Mustard
2 tbsp Ground Paprika Powder
1 tbsp Ground Garlic Powder
1 tbsp Ground Ginger Powder
2 tbsp Ground White Pepper

1. Mix all the above in a bowl and set aside. Use sufficient to coat the chicken later in a plate. Save the rest for future use.

Chicken Meat
2. Season chicken with salt and pepper. Let it marinate for 30 minutes. Then soak with beaten eggs.

3 Heat up oil till hot about 180C and maintain at medium. Do not fried at high temperature. The seasoning will burned before the meat is cooked.

4 Slice the chicken to cook evenly if desired. Coat the chicken evenly with the flour mix. Fried for about 6 to 10 minutes or till golden brown.

Shepherd Pie

Last year my friend made shepherd pie for our gathering and I like it very much.  This year she made it again and I saw she posted on her facebook.  Thus, I asked her for the recipe and decided to cook it today for dinner.  Thank you, Adeline Ang for sharing the recipe.

Nicely piped mashed potatoes

Recipe shared by Adeline Ang:

Ingredients:
500g holland potatoes, peeled
30g butter
2-3 tbsp milk or evaporated milk (adjust to make the texture of mashed potatoes to your liking)
Salt to taste
Sugar or chicken powder to taste
Oil for frying
2 large onions, diced
300g minced pork (can used chicken or beef)
1 pack of fresh brown mushroom (I used 3/4 pack)
Ham(optional)
1 small can of tomato paste (I used 2/3 portion of a can)
1 can of campbell tomato soup (I used 2/3 portion of a can)
Cheddar cheese, grated

Method:
1. Preheat oven at 180 deg.
2. Cut the potatoes into large cubes and boil in water with pinch of salt till soft.
3. Drain water out and put the pot of potatoes over low heat for 5- 10mins to dry off the water.  Do not burn the potatoes.
4. Mash the potatoes together with salt, butter, pepper and milk.
5. Fry onion with oil in a pan until soft and fragrant, then add the minced pork and stir fry till cooked.
6. Add the mushrooms, ham, tomato paste and tomato soup and continue to cook.
7. Add salt, pepper and chicken powder to taste.
8. Pour the mixture into an 8" square or round baking tray and cover with the mashed potatoes.  I pipe the mashed potatoes on top using 1M piping tip. Then sprinkle some cheddar cheese on top.
9. Bake for about 30 mins or until lightly brown.

Baked Halibut with Asparagus side with baked tomatoes, potato and sauteed shiitake mushroom

Today we are having Baked Halibut with Asparagus side with baked tomatoes, potato and sauteed shiitake mushroom.
How about you?




Marinate for Halibut: 
Salt
Pepper
Dried Basil
Dried Rosemary
Melted Butter
Bread Crumbs

Marinate the fish with the above for 1 hr in the fridge.
Baked in oven at 200 deg for 10-12mins depend on size of fish.

Marinate for baby potatoes: 
Salt
Pepper
Dried Basil
EVOO

Marinate the baby potatoes with the above till you are ready to bake it.

Sauteed Shiitake Mushroom:
Butter
Garlic
Milk
Grounded black pepper

Melt some butter in pan, fry garlic till fragrant, add in sliced shiitake mushroom and fry till cooked then add in some milk and let it cook awhile then add in dash of black pepper and off heat.
